The Perfect Margarita

Margaritas are one of my favorite cocktails.

For as long as I can remember, my dad has made amazing margaritas. It’s tricky to find one that is simple and well-made. Too often they are sugar-laden or just made with a bunch of margarita mix and tequila. This version errs on the lime-y side. It’s not too sweet and has the perfect balance of lime and tequila. These hand-crafted margaritas are well worth taking the time to make. This cocktail is the perfect match to steak taco salad and/or tomatillo Serrano salsa with corn chips. Continue reading

Individual Chicken Pot Pies

i don’t know about you, but in my book crisp, fall weather calls for a warm, comforting meal.

And what’s more comforting than than chicken pot pie? Although it requires a bit of prep, this recipe is very straightforward and simple. Plus, since it makes individual pot pies, you automatically have dinner for at least one other night of the week! Likewise, these pot pies are easy to freeze and reheat.  Since these pot pies are individual, I think just having a top crust works perfectly. Enjoy!

Vegetable Quiche

The best thing about quiche is it’s great for Breakfast, Lunch, or dinner.

Quiche is a great way to use up any leftover veggies you have and it’s easy to whip together. You really can’t go wrong with your choice of cheese and vegetables. To keep my quiche low-FODMAP, I used a combination of bell peppers, yellow zucchini squash, green onions, and baby kale and garnished the top with sliced tomatoes. Yum! Any pie crust will work here as well and the great part about this recipe is you don’t have to do any pre-baking. Score.
